Professional French trained Chef with over 30 years experience and 20 years experience in Head Chef roles. Working in a range of establishments including private houses, rosette fine dining restaurants, large hotels and Colleges. Experienced in running large staffs as Head Chef as well as being responsible for all aspects of the kitchen including finances, recruitment, ensuring clear communication with other department heads and all aspects of menu planning. Working with daily covers of up to 250 as well as working directly for private individuals and catering for intimate dinners to large private functions.
